Prid&aacute;va&#357; cukry (napr. sachar&oacute;zu, &hellip;) do zakys&aacute;van&eacute;ho m&eacute;dia (mlieko, ovocie, zelenina [napr. zemiaky, &hellip;], obilie,  &hellip;) pre podporu, najm&auml; bakt&eacute;ri&iacute; ,&hellip; pri kysnut&iacute; a najm&auml; kvasiniek pri kvasen&iacute;? Ako pri viacer&yacute;ch (mo&#382;no takmer v&scaron;etk&yacute;ch, ale mo&#382;no je to prirodzen&yacute; z&aacute;kon a vyjadrenie z&aacute;kladnej samoregul&aacute;cie (syst&eacute;mov minim&aacute;lne biologick&yacute;ch, ale mo&#382;no aj chemick&yacute;ch, &#269;i dokonca fyzik&aacute;lnych),  a podstata tak&yacute;chto vec&iacute;, &#382;e produkt (z poh&#318;adu &#269;loveka takmer v&#382;dy v&yacute;sledn&yacute; a cielen&yacute; a samozrejme okrem uchov&aacute;vania a konzervovania potravy pri potravin&aacute;rskom kysnut&iacute; a kvasen&iacute;) t&yacute;chto bi&oacute;mov (ale napr. aj d&aacute;&#382;&#271;oviek, &hellip;) je pre bi&oacute;m, ktor&yacute; ho produkuje, toxick&yacute; a&#382; smrte&#318;n&yacute;, alebo aspo&#328; hiberna&#269;n&yacute; (kyselina mlie&#269;na pre bakt&eacute;rie, alkohol pre kvasinky, &hellip;) a teda v praxi nie je mo&#382;n&eacute; dosiahnu&#357;, aby sa v&scaron;etok materi&aacute;l pre kysnutie (najm&auml; &#318;ubovo&#318;n&eacute; cukry &ndash; gluk&oacute;za, frukt&oacute;za, sachar&oacute;za, &scaron;krob, celul&oacute;za, &hellip;) a kvasenie bi&oacute;m spracoval, preto&#382;e v&auml;&#269;&scaron;inou, a najm&auml; pri umelom pridan&iacute; materi&aacute;lu (vstupu) pre biomick&eacute; spracovanie (v uvedenom pr&iacute;klade sachar&oacute;zy), &uacute;rove&#328; a koncentr&aacute;cia produktu (kyseliny mlie&#269;nej, alkoholu, &hellip;) dosiahne toxick&uacute; a&#382; smrte&#318;n&uacute;, alebo aspo&#328; hiberna&#269;n&uacute; &uacute;rove&#328;, a teda sa v&scaron;etok nespracuje a zostatkov&aacute; (najm&auml; pridan&aacute;) , &#269;o v&auml;&#269;&scaron;inou kaz&iacute; kvalitu (sofistikovan&uacute; chu&#357;ov&uacute;, well-being, &hellip;, ale aj biologick&uacute; v zdravotnom zmysle a prirodzen&eacute;ho vyv&aacute;&#382;en&eacute;ho a holistick&eacute;ho fungovania vec&iacute;, najm&auml; v&yacute;&#382;ivy v biosf&eacute;re, &hellip;) produkcie &ndash; jogurtu, v&iacute;na, p&aacute;lenky, &hellip;). Je to na zv&aacute;&#382;enie, &#382;e &#269;i a v akej miere. Pri jogurte (zo sk&uacute;senosti) to nevn&iacute;mam tak kriticky (preto&#382;e nepripravujem jogurt pre &#318;ud&iacute;, ktor&iacute; maj&uacute; probl&eacute;my s lakt&oacute;zou &ndash; vi&#271; ni&#382;&scaron;&scaron;ie), ako pri v&iacute;ne a p&aacute;lenke, kde zbytkov&yacute; cukor je podstatn&yacute;m chu&#357;ov&yacute;m a celkovo well-being (&#269;iasto&#269;ne nepr&iacute;jemn&eacute; stavy po konzum&aacute;cii &ndash;   probl&eacute;mom , &hellip;). Hlavnou v&yacute;zvou je, ko&#318;ko umelo prida&#357; cukru a ak&eacute;ho cukru.  V&scaron;eobecne umel&eacute; pridanie cukru jednozna&#269;ne prospieva do miery, k&yacute;m v&yacute;sledn&eacute; mno&#382;stvo biomick&eacute;ho produktu (napr. alkoholu, &hellip;, nepresiahne \/ nedosiahne kritick&uacute; toxick&uacute; hranicu pre bi&oacute;m (alebo &#269;as&#357; bi&oacute;mu), hlavne pre jeho rozmno&#382;ovanie, a v&scaron;etok pridan&yacute; cukor bi&oacute;m spracuje. Samozrejme, treba po&#269;&iacute;ta&#357; aj s t&yacute;m, &#382;e bi&oacute;m m&ocirc;&#382;e uprednos&#357;&#328;ova&#357; ur&#269;it&yacute; cukor a prednostne sa &#382;ivi&#357; ur&#269;it&yacute;m druhom cukru, &#269;o je &#382;iad&uacute;ce, ke&#271; je prednostn&yacute;m a upred&#328;os&#357;&#328;ovan&yacute;m cukrom umelo pridan&yacute;, preto&#382;e prirodzen&yacute; cukor je v&auml;&#269;&scaron;inou chu&#357;ovo zauj&iacute;mavej&scaron;&iacute; a &#382;iad&uacute;cej&scaron;&iacute; a celkovo &bdquo;chutnej&scaron;&iacute;&ldquo; a je to skuto&#269;n&aacute;, priemyselne nespracovan&aacute; &bdquo;subpotravina&ldquo;, prirodzene okrem pr&iacute;padu v&yacute;skytu precitlivelosti, nezn&aacute;&scaron;anlivosti, &#269;i dokonca alergie na dan&yacute; prirodzen&yacute; cukor, ako je to napr. u lakt&oacute;zy, &hellip; V&scaron;eobecn&yacute; typ \/ druh \/ alebo pridan&eacute;ho cukru taktie&#382; ovplyv&#328;uje zlo&#382;enie bi&oacute;mu, ke&#271; prid&aacute;me jednoduch&eacute; cukry, mas&iacute;vne sa rozmno&#382;ia bakt&eacute;rie a kvasinky a &hellip;, kt. sa &#382;ivia a prekvitaj&uacute; na jednoduch&yacute;ch cukroch, (mo&#382;no) na &uacute;kor a s potenci&aacute;lom potla&#269;i&#357; bakt&eacute;rie &#382;iviace sa zlo&#382;itej&scaron;&iacute;mi cukrami.  Je to komplexn&aacute; vec. Samozrejme v&scaron;eobecne &#269;&iacute;m jednoduch&scaron;&iacute; cukor, t&yacute;m je jeho spracovanie r&yacute;chlej&scaron;ie, &#318;ah&scaron;ie a priamo&#269;iarej&scaron;ie (napr. nemusia a(lebo) v men&scaron;ej miere (ne)vznikaj&uacute; napr. spracovate&#318;sk&eacute; &scaron;n&uacute;ry a biomick&eacute; cykly, ako napr. pri spracovan&iacute; celul&oacute;zy, &hellip;, ke&#271; v&yacute;sledn&yacute; hlavn&yacute; alebo ved&#318;aj&scaron;&iacute; produkt jednej zlo&#382;ky bi&oacute;mu je vstupn&yacute;m produktom pre in&uacute; zlo&#382;ku bi&oacute;mu (prebiotik&aacute;) a pod &hellip; To zah&#341;&#328;a meranie cukornatosti (\/ &scaron;kobnatosti \/ objemu celul&oacute;zy \/ &hellip;) biomick&eacute;ho m&eacute;dia \/ substr&aacute;tu (napr. ovocia, &hellip;) a presn&yacute; v&yacute;po&#269;et potenci&aacute;lu (umelo pri)dan&eacute;ho cukru, ktor&yacute; bi&oacute;m vie spracova&#357; (gluk&oacute;za, frukt&oacute;za, sachar&oacute;za, lakt&oacute;za, &scaron;krob, &hellip;).  Pri profesion&aacute;lnych podmienkach, &#269;i u&#382; v individu&aacute;lnej, s&eacute;riovej alebo ve&#318;ko-v&yacute;robe, to samozrejme nie je probl&eacute;m a je to s&uacute;&#269;as&#357; procesu a kontroln&eacute;ho zoznamu, ale v be&#382;nej kuchyni &hellip;  <\/li><li>pri kysnut&iacute;, zakys&aacute;van&iacute; a kvasen&iacute; je podstatn&eacute; a absol&uacute;tne d&ocirc;sledne, strikte, &hellip; a neviem dostato&#269;ne zd&ocirc;razni&#357;, ak&eacute; je to maxim&aacute;lne d&ocirc;le&#382;it&eacute;, dodr&#382;iava&#357; anaer&oacute;bny proces vstupov. Samozrejme je to predmetom ekonomick&eacute;ho zva&#382;ovania, preto&#382;e oi je to n&aacute;ro&#269;nej&scaron;ie na &#269;as, priestory, manipul&aacute;ciu, &hellip; ako spa&#318;ovanie (skl&aacute;dkovanie nie je rie&scaron;en&iacute;m biologick&eacute;ho nebezpe&#269;enstva, preto&#382;e Mnoho, mo&#382;no V&auml;&#269;&scaron;ina, mo&#382;no Takmer V&scaron;etky [MVTV] napr. choroboplodn&eacute;ho z&aacute;rodky pre&#382;iv&uacute; v aer&oacute;bnom (za-pr&iacute;stupu-vzduchu substr&aacute;te veky). Taktie&#382; &bdquo;kvasn&eacute;&ldquo; n&aacute;doby je potrebn&eacute; po ka&#382;dom vypr&aacute;zdnen&iacute; vydenzifikova&#357;.   <\/li><li>samozrejme kysnutie a kvasenie, oi, m&ocirc;&#382;e sl&uacute;&#382;i&#357; aj na spracovanie fyzik&aacute;lne a chemicky nebezpe&#269;n&eacute;ho materi&aacute;lu, treba v&scaron;ak bra&#357; do &uacute;vahy, &#382;e bi&oacute;m sa m&ocirc;&#382;e roz&scaron;&iacute;ri&#357; do sveta a napr. roz&scaron;&iacute;renie bi&oacute;mu, ktor&yacute; efekt&iacute;vne spracov&aacute;va napr. ropn&eacute; l&aacute;tky, gumu, &hellip; m&ocirc;&#382;e ma&#357; obrovsk&eacute; negat&iacute;vne d&ocirc;sledky pre &#318;udstvo &hellip; <\/li><\/ol>\n\n\n\n<p class=\"has-background has-medium-font-size has-cyan-bluish-gray-background-color\"><strong>Mlieko<\/strong><\/p>\n\n\n\n<p>Zakysan&eacute; mlieko, jogurt, srv&aacute;tka a tvaroh<\/p>\n\n\n\n<ol><li>Jogurt &ndash; z &#269;apovan&eacute;ho surov&eacute;ho kravsk&eacute;ho mlieka 6 L, kult&uacute;ra Rajo Probio jogurt &ndash; jogurt vybra&#357; z chladni&#269;ky hne&#271; ako prv&uacute; vec, aby sa zohrial a bakt&eacute;rie nedostali ve&#318;l&yacute; teplotn&yacute; &scaron;ok, pod&#318;a sk&uacute;senost&iacute; im to vidite&#318;ne nevad&iacute;, ale predsa je to lep&scaron;ie spravi&#357; ako prv&uacute; vec,  zav&aacute;rac&iacute; elektrick&yacute; hrniec 27 L, do zav&aacute;racieho hrnca vylia&#357; 5,5 L mlieka, nastavi&#357; na 99 st.C na 5 min (6 L mlieka u&#382; vyvrie pri 100 st.C z tohto zav&aacute;racieho hrnca), preto&#382;e elektrick&eacute; ohrieva&#269;e maj&uacute; tendeniu dlho dobieha&#357;, mo&#382;no t&yacute;m docieli&#357; 100 st.C na 1 min&uacute;tu) a necha&#357; zohrieva&#357;. Na panvici  (max odpor&uacute;&#269;anie najlep&scaron;ie s kameninov&yacute;m povrchom &ndash; karamel sa dobre urob&iacute; aj odlep&iacute;) rozp&aacute;li&#357; trocha masla, prida&#357; 3 &ndash; 4,  aj viac, vrchovat&eacute; ly&#382;ice bieleho repn&eacute;ho cukru (5 je u&#382; ve&#318;a a bi&oacute;m ho nespracuje) a 1, aj viac, ly&#382;icu hned&eacute;ho trstinov&eacute;ho cukru, aby sme pridali miner&aacute;ly z hned&eacute;ho cukru a jeho chu&#357;ov&yacute; profil (aj ke&#271; iba homeopaticky, zlep&scaron;ili chu&#357; a podporili prospe&scaron;n&eacute; bakt&eacute;rie &ndash; netreba sa b&aacute;&#357;, &#382;e bude sladk&yacute;, ani nezdrav&yacute;, preto&#382;e (takmer) v&scaron;etok cukor spracuj&uacute; bakt&eacute;rie -, necha&#357;  skaramelizova&#357;, !!! ve&#318;mi d&ocirc;le&#382;it&eacute; &ndash; !!! &#269;o najviac poodst&uacute;pi&#357; od panvice &ndash; na d&#314;&#382;ku &uacute;plne  natiahnutej ruky a chr&aacute;nenia si o&#269;&iacute; a uistenia sa, &#382;e nikto nie je v bl&iacute;zkosti !!!, karamel m&aacute; ve&#318;mi vysok&uacute; teplotu a ve&#318;mi prsk&aacute;, obsah panvice m&ocirc;&#382;e aj prudko vzb&#314;knu&#357; aj na nieko&#318;ko sek&uacute;nd, len &#382;iadnu paniku, z povzdiali kontrolova&#357; situ&aacute;ciu !!! prilia&#357; mlieko, ktor&eacute; zostalo na viackr&aacute;t do panvice, mie&scaron;a&#357; a rozp&uacute;&scaron;&#357;a&#357; karamel, ak sa vytvoril a odlepil s&uacute;visl&yacute; &bdquo;tanier&ldquo; karamelu (najm&auml; na kameninovej panvici) tak ho rozbi&#357; a troch rozpusti&#357;, ak nie, tak a&#382; do &uacute;pln&eacute;ho rozpustenia v mlieku, prilia&#357; obsah do zav&aacute;racieho hrnca, zamie&scaron;a&#357;, m&ocirc;&#382;e sa sputi&#357; teplotn&aacute; varovn&aacute; signaliz&aacute;cia zav&aacute;racieho hrnca, vtedy hrniec vypn&uacute;&#357; a znova zapn&uacute;&#357; a pr&iacute;padne nastavi&#357; znova. Ak je to potrebn&eacute;, tak znova prilejeme mlieko do panvice na plameni a pomocou silik&oacute;novej stierky o&#269;ist&iacute;me panvicu a rozpust&iacute;me v&scaron;etko v panvici a prilejeme do zav&aacute;racieho hrnca. Neprid&aacute;vame u&#382; ni&#269;, ani st&eacute;viu, preto&#382;e sa zd&aacute;, &#382;e to nepriaznivo vpl&yacute;va na mno&#382;enie t&yacute;ch spr&aacute;vnych bakt&eacute;ri&iacute;.
